    Chop the vegetables

    Wash and chop the carrots, zucchini, bell peppers, eggplant, onion, and garlic into bite-sized pieces.

    Prepare spices

    Measure out the ground cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper in a small bowl and mix them together.

Cooking

    Sauté vegetables

    In a large tagine or heavy pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.

    Add root vegetables

    Add the carrots and eggplant to the pot, cooking for about 5 minutes until they start to soften.

    Incorporate spices

    Add the prepared spices to the vegetable mixture, stirring well to coat the vegetables evenly.

    Add remaining vegetables and broth

    Stir in the zucchini and bell peppers, followed by the vegetable broth and chickpeas. Bring the mixture to a gentle simmer.

    Add honey and lemon juice

    Stir in the honey and lemon juice, letting the tagine simmer for about 20-25 minutes until all vegetables are tender and flavors meld together.

    Garnish and serve

    Once cooked, remove from heat, garnish with fresh cilantro, and serve hot with couscous or crusty bread.
