Method

Preparing the Salad

    Prepare the Bulgur

    Place 1 cup of fine bulgur wheat in a bowl and cover it with boiling water. Let it sit for about 20 minutes until the bulgur has absorbed the water and is tender.

    Chop the Herbs

    While the bulgur is soaking, finely chop 2 cups of fresh parsley and 1 cup of fresh mint. Set aside.

    Combine Ingredients

    In a large mixing bowl, combine the soaked bulgur wheat, chopped parsley, and chopped mint. Mix well.

    Dress the Salad

    Add 0.5 cup of fresh lemon juice, 0.25 cup of extra virgin olive oil, 1 tsp of salt, and 0.5 tsp of black pepper to the bowl. Toss everything together until well combined.

Preparing the Za'atar Pita Side

    Prepare Pita

    Preheat your oven to 375°F (190°C).

    Brush with Olive Oil

    Brush each piece of pita bread with 2 tablespoons of extra virgin olive oil and sprinkle 2 tablespoons of za'atar spice mix evenly over the top.

    Bake the Pita

    Place the pita bread on a baking sheet and bake in the preheated oven for about 5-7 minutes, or until slightly crispy and golden.

    Serve

    Once the pita is done, remove from the oven and let cool slightly. Cut into wedges to serve alongside the tabouli.
