Preheat the Oven
Preheat your oven to 180°C (350°F).

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until softened. Then add in the spinach and olives, cooking for an additional 2-3 minutes until the spinach wilts.

In a mixing bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until combined.

Bake the Frittata
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and lightly golden on top. Remove from the oven and let it cool slightly before slicing.
