Add Remaining Ingredients
Add peas, diced carrots, coriander powder, garam masala, turmeric powder, and salt to the pan. Cook for about 5-7 minutes until the vegetables are tender. Mix in the mashed potatoes and stir well. Remove from heat and let the filling cool.

Prepare the Wrappers
Take a wonton wrapper and place a tablespoon of the filling in the center. Moisten the edges of the wrapper with water.

Form the Samosa
Fold the wrapper over the filling to create a triangle shape. Press the edges firmly to seal. Repeat with the remaining wrappers and filling.
Cooking

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

In a small bowl, mix together honey and mustard until well combined. Adjust the sweetness by adding more honey if desired.
