    Prepare the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 10 minutes to release their color and flavor.

    Chop the Onion

    Peel and finely chop the onion.

    Prepare the Cauliflower

    Wash the cauliflower and cut it into small florets.

Cooking

    Sauté the Onion

    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Add Cauliflower

    Add the cauliflower florets to the saucepan and cook for an additional 3-4 minutes, stirring occasionally.

    Add Rice and Broth

    Stir in the long-grain rice, vegetable broth, salt, and black pepper. Bring the mixture to a boil.

    Add Saffron

    Once boiling, add the saffron mixture (including the water) to the pot, stir gently, and reduce the heat to low.

    Simmer

    Cover the saucepan with a lid and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.

    Fluff and Serve

    Remove the saucepan from heat, let it sit covered for 5 minutes, then fluff the rice with a fork. Serve warm.
