Preparing the Lamb

    Marinate the Lamb

    In a large bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Add the lamb shoulder and coat well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

    Roast the Lamb

    Preheat the oven to 180°C (350°F). Place the marinated lamb in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 63°C (145°F) for medium-rare. Baste occasionally with the juices.

Preparing the Vegetables

    Chop the Vegetables

    While the lamb is roasting, wash and chop the zucchini, bell peppers, carrots, and red onion into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped vegetables and sauté for about 10-15 minutes, or until they are tender and slightly caramelized. Season with salt and pepper to taste.

Making the Tzatziki Sauce

    Prepare the Tzatziki

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Mix well and adjust seasoning to taste. Refrigerate until serving.

Serving the Dish

    Plate the Dish

    Once the lamb is done roasting, let it rest for 10 minutes before slicing. Serve the sliced lamb alongside the sautéed vegetables and a generous dollop of tzatziki sauce.
