Lamb Preparation

    Preheat your oven to 400°F (200°C).

    Prepare the Lamb

    In a small bowl, mix together the sumac, olive oil, salt, and black pepper to create a marinade. Rub this mixture all over the rack of lamb, ensuring it gets into the crevices.

    Sear the Lamb

    In a hot skillet over medium-high heat, sear the lamb on all sides until browned, about 2-3 minutes per side.

    Roast the Lamb

    Transfer the seared lamb to a roasting pan and place it in the preheated oven. Roast for about 20-25 minutes for medium-rare, or until it reaches your desired doneness.

    Rest the Lamb

    Remove the lamb from the oven and let it rest for at least 10 minutes before slicing.

Tzatziki Sauce Preparation

    Prepare the Cucumber

    Grate the cucumber using a box grater and squeeze out excess moisture with a clean kitchen towel.
