Method

Kabobs

    Prepare the Meat and Veggies

    Cut the filet mignon or lamb into 1-inch cubes. Chop the bell peppers and red onion into similar-sized pieces.

    Marinate

    In a bowl, mix olive oil, garlic powder, salt, and black pepper. Add the meat and veggies, toss to coat, and let marinate for at least 30 minutes.

    Assemble Kabobs

    Thread the marinated meat and veggies onto skewers, alternating between meat and vegetables.

    Grill Kabobs

    Preheat the grill to medium-high heat. Grill the kabobs for about 10-15 minutes, turning occasionally until cooked to desired doneness.

Scrambled Eggs

    In a bowl, whisk together eggs, milk, salt, and black pepper.

    In a nonstick skillet, melt butter over medium heat. Pour in the egg mixture and cook, stirring gently, until just set.

Avocado Dip

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

    Add lime juice, minced garlic, and salt to the avocado. Mash together until smooth and creamy.

Black Beans

    In a saucepan, combine the canned black beans (drained and rinsed) with cumin and salt. Heat over medium heat until warmed through.
