    Prepare Hummus

    In a food processor, combine 1 cup of chickpeas, 3 tbsp of lemon juice, 2 cloves of garlic, 1 tbsp of tahini, and 1 tsp of salt. Blend until smooth, adding water as needed for desired consistency. Drizzle with olive oil and sprinkle cumin and paprika on top.

    Prepare Baba Ghanouge

    Roast 1 large eggplant until charred. Once cool, scoop out the flesh and combine with 3 tbsp of lemon juice, 2 cloves of garlic, 1 tbsp of tahini, and salt to taste in a food processor. Blend until smooth and drizzle with olive oil.

    Prepare Avocado Dip

    In a bowl, mash 2 medium avocados with 3 tbsp of lemon juice, 1 tsp of salt, and 1 tsp of cumin until smooth. Adjust seasoning to taste and serve.

Spanakopita

    Prepare Filling

    Sauté 1 chopped onion in 2 tbsp of olive oil until translucent. Add 400g of spinach and cook until wilted. Remove from heat and let cool. Combine with 200g of crumbled feta, 1 beaten egg, salt, and pepper.

    Assemble Spanakopita

    Preheat the oven to 375°F (190°C). Layer 5 sheets of phyllo dough in a greased baking dish, brushing each layer with olive oil. Spread the spinach filling evenly, then top with additional phyllo sheets, brushing with olive oil. Cut into squares and bake for 30-35 minutes until golden brown.

    Prepare Falafel

    Fry or bake 12 pieces of falafel according to package instructions until golden brown and crispy.

    Prepare Grape Leaves

    Serve 10 grape leaves, either store-bought or homemade, warm or at room temperature.
