Preparation

    Chop the Onion

    Peel and finely chop the medium onion.

    Rinse the Lentils

    Rinse the red lentils under cold running water until the water runs clear.

Cooking

    Sauté the Onion

    In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until it is soft and translucent.

    Add Lentils and Spices

    Stir in the rinsed red lentils, cumin, turmeric, paprika, salt, and black pepper. Cook for another 2 minutes to toast the spices.

    Add Liquid

    Pour in the water or vegetable broth. Bring to a boil, then reduce the heat to low and cover the pot.

    Simmer the Soup

    Let the soup simmer for about 20-25 minutes, or until the lentils are completely soft.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.

Serving

    Serve the Soup

    Ladle the lentil soup into bowls. Serve hot with pieces of pita bread on the side.
