Method

Marinating the Lamb

    Prepare the Marinade

    In a large bowl, combine olive oil, minced garlic, lemon juice, ground cumin, ground coriander, salt, black pepper, and sumac. Mix well.

    Marinate the Lamb

    Add the leg of lamb to the marinade, ensuring it is fully coated. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Preparing the Kabobs

    Prepare the Vegetables

    While the lamb is marinating, chop the fresh parsley and cut the onion into wedges.

    Skewering

    Once marinated, remove the lamb from the fridge and cut it into 1-inch cubes. Alternate threading the lamb cubes, onion wedges, and chopped parsley onto skewers.

Cooking the Kabobs

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Kabobs

    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.

Serving

    Once cooked, remove the kabobs from the grill. Serve immediately with tzatziki sauce and warm pita bread.
