Kufta Skewers

    Prepare the Mixture

    In a large bowl, combine the minced leg of lamb, chopped parsley, finely chopped red bell pepper, jalapeño, onion, ground cumin, ground coriander, salt, black pepper, and minced garlic. Mix thoroughly until well combined.

    Form the Skewers

    With wet hands, take a portion of the mixture and mold it around skewers, forming long, oval shapes. Make sure the meat is tightly packed to prevent it from falling apart while grilling.

    Preheat the Grill

    Preheat your grill to medium-high heat and brush the skewers lightly with olive oil.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and has a nice char.

    Toss the halved tomatoes and bell pepper wedges with olive oil, salt, and black pepper.
