Preparing the Lamb Stew

Building the Stew
Add chopped tomatoes, thyme, and bay leaves to the vegetables. Stir well, then return the seared lamb to the pot. Pour in the broth, ensuring the lamb is mostly submerged. Bring to a boil.

Simmering the Stew
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the lamb is tender and easily pulls apart.

Adding Peas
In the last 10 minutes of cooking, stir in the sweet peas. Adjust seasoning with additional salt and pepper if necessary.
Cooking the Saffron Rice

Preparing the Rice
In a small saucepan, bring 2 cups of water to a boil. Add the basmati rice and a pinch of saffron threads. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and all the water has been absorbed.

Fluffing the Rice
Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
