Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water and active dry yeast. Let sit for about 5-10 minutes until foamy.

  2. 2

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the foamy yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface. Knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Let the Dough Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Assembling the Pizza

  1. 5

    Prepare the Toppings

While the dough is rising, slice the fresh tomatoes and tear the mozzarella into pieces.

  2. 6

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 7

    Shape the Dough

Once the dough has risen, punch it down and transfer to a floured surface. Roll or stretch it out into a round shape about 1/4 inch thick.

  4. 8

    Add Toppings

Brush the dough lightly with olive oil. Sprinkle the zaatar spice evenly over the surface. Distribute the mozzarella pieces and sliced tomatoes on top.

  5. 9

    Grill the Pizza

Carefully place the pizza on the grill. Close the lid and grill for about 8-10 minutes, until the crust is golden and the cheese is melted.

  6. 10

    Finishing Touches

Remove the pizza from the grill and sprinkle fresh basil leaves on top. Drizzle with a little more olive oil if desired.

  7. 11

    Slice and Serve

Let the pizza cool for a minute, slice it up, and serve hot.
