    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes.

    Boil the Potatoes

    Place the cubed potatoes in a pot of salted water and boil for 10 minutes until just tender. Drain and set aside.

    Fry the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the boiled potatoes, paprika, garlic powder, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until they are golden brown and crispy.

    Prepare the Vegetables

    Chop the onion, bell pepper, tomato, and Greek olives into small pieces.

    Sauté the Vegetables

    In the same skillet used for the potatoes, add 1 tablespoon of olive oil. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened.

    Add Tomato and Olives

    Stir in the chopped tomato and Greek olives, cooking for an additional 2-3 minutes until the tomato is softened.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper. Pour the eggs into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are just set (about 3-5 minutes).

    Sprinkle the feta cheese over the scrambled eggs and cook for an additional minute until slightly melted.
