    Prep the Ingredients

    Wash and dice the carrots, bell pepper, zucchini, and onion. Mince the garlic and grate the ginger. Set all the vegetables aside.

Cooking

    Sauté the Aromatics

    In a large pot or Dutch oven, heat 2 tablespoons of oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent, about 5 minutes.

    Cook the Chicken

    Add the chicken pieces to the pot and cook for about 7-10 minutes, stirring occasionally, until the chicken is browned on all sides.

    Add Vegetables and Spices

    Stir in the diced carrots, bell pepper, zucchini, and green peas. Add the curry powder, turmeric, cumin, coriander, red chili powder, salt, and black pepper. Mix well to coat the vegetables and chicken with the spices.

    Add Liquids

    Pour in the coconut milk and broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

    Once cooked, stir in the chopped cilantro. Serve the curry hot with lemon wedges on the side for added flavor.
