Method

Chicken Kabob Preparation

  1. 1

    Prepare the Chicken

Cut the chicken breast into 1-inch cubes and place them in a bowl. Add olive oil, garlic powder, paprika, salt, and black pepper. Mix well to coat the chicken evenly. Allow to marinate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

Chop the bell peppers and red onion into similar-sized pieces as the chicken. Set aside.

  3. 3

    Assemble the Kabobs

Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between each ingredient. Ensure that the ingredients are tightly packed but not overcrowded.

  4. 4

    Grill the Kabobs

Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Grilled Vegetables Preparation

  1. 5

    Prepare the Vegetables

Slice the zucchini into rounds. In a bowl, add the sliced zucchini, mushrooms, olive oil, salt, and black pepper. Toss to coat.

  2. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the chicken kabobs. Grill for 5-7 minutes until they are tender and slightly charred, turning occasionally.

Honey Mustard Sauce Preparation

  1. 7

    Mix the Sauce

In a small bowl, combine honey, Dijon mustard, and apple cider vinegar. Whisk together until smooth and well-combined. Adjust the flavor to taste.

Serving

  1. 8

    Serve the Dish

To serve, place the grilled chicken kabobs and vegetables on a platter. Serve alongside the honey mustard sauce and warm pita bread.
