Preparation of Cauliflower

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower

    Wash and cut the cauliflower into small florets. Place them in a large bowl.

    Season the Cauliflower

    Drizzle the cauliflower florets with olive oil, salt, and pepper. Toss to coat evenly.

    Roast the Cauliflower

    Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.

Prepare the Wrap

    Chop the Vegetables

    While the cauliflower is roasting, chop the lettuce, tomato, and red onion. Slice the pickles.

    Assemble the Wrap

    Once the cauliflower is done roasting, take a wrap or pita and layer with lettuce, roasted cauliflower, chopped tomato, onion, and pickles.

    Add Sauces

    Drizzle garlic aioli and tahini over the fillings.

    Optional Brie Addition

    If using, add slices of brie cheese on top before wrapping.

    Wrap and Serve

    Fold the wrap or pita tightly around the fillings and serve immediately, or wrap in foil to take on the go.
