Method

Prepare the Rice

    Rinse the Rice

    Rinse 1 cup of basmati rice under cold water until the water runs clear to remove excess starch.

    Boil the Water

    In a medium pot, bring 2 cups of water to a boil.

    Add Saffron and Salt

    Once the water is boiling, add 0.5 tsp of saffron threads and 0.5 tsp of salt.

    Cook the Rice

    Add the rinsed basmati rice to the pot, reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and the water is absorbed.

    Fluff the Rice

    Remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork.

Prepare the Black Beans

    Sauté Onion and Garlic

    In a medium skillet, heat 1 tbs of olive oil over medium heat. Add 0.5 medium chopped onion and 2 minced garlic cloves. Sauté until the onion is translucent.

    Add Black Beans

    Drain and rinse 1 can of black beans, then add to the skillet.

    Season the Beans

    Add 1 tsp of cumin, 0.5 tsp of salt, and 0.25 tsp of black pepper. Stir well and cook for about 5-7 minutes until heated through.

Prepare the Cauliflower

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Cauliflower

    In a bowl, toss 2 cups of cauliflower florets with 1 tbs of olive oil, 0.5 tsp of salt, and 0.25 tsp of black pepper.

    Roast the Cauliflower

    Spread cauliflower on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until tender and golden brown, shaking the pan halfway through.

Serve

    Plate the Dish

    On each plate, serve a portion of saffron rice topped with black beans and roasted cauliflower.
