Marinade and Chicken Preparation

Prepare the Marinade
In a large bowl, combine balsamic vinegar, pomegranate juice, minced garlic, olive oil, salt, and black pepper. Whisk until well mixed.

Marinate the Chicken
Place the boneless chicken breasts into the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Portabella Mushrooms
Remove the stems from the portabella mushrooms and gently clean the caps. Place them in the remaining marinade and set aside.

Preheat the Grill
Preheat your grill or grill pan over medium-high heat.

Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Cook the Red Bell Pepper
Slice the red bell pepper into strips and grill alongside the chicken and mushrooms for approximately 3-4 minutes, turning until charred and tender.

In a mixing bowl, combine Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, fresh dill, lemon juice, and salt. Stir until smooth and well combined. Refrigerate until ready to serve.
