    Rinse the Lebanese kidney beans and lima beans thoroughly under cold water. If using dried beans, soak them overnight and cook until tender.

    Dice the carrots, onion, and seasonal vegetables. Slice the mushrooms and mince the garlic. Set aside.

Cooking

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

    Add the diced carrots, seasonal vegetables, and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the vegetables are tender.

    Stir in the cooked Lebanese kidney beans and lima beans. Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing all the flavors to meld together.
