Preparation of Baba Ghanouge

    Roast the Eggplant

    Preheat your oven to 400°F (200°C). Poke holes in the eggplants with a fork to allow steam to escape. Place them on a baking sheet and roast for about 30-40 minutes until the skin is charred and the flesh is soft. Alternatively, you can smoke the eggplants over a grill for a smokier flavor.

    Scoop out the Flesh

    Once the eggplants are roasted, let them cool slightly. Cut them in half and scoop out the soft flesh into a mixing bowl, discarding the skin.

    Add Ingredients

    To the bowl with the eggplant flesh, add minced garlic, lemon juice, tahini, and olive oil. Mix well until the ingredients are combined and creamy.

    Blend to Desired Consistency

    For a smoother texture, you can blend the mixture using a food processor or a hand blender. Blend until you achieve your desired consistency, adding a little water if necessary to thin it out.
