Salad Preparation

Prepare the Vegetables
Begin by washing the cherry tomatoes and cutting them in halves. Peel the cucumber and chop it into bite-sized pieces. Thinly slice the red onion. Chop the fresh parsley finely.

Prepare the Avocado
Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash gently with a fork, leaving some chunks for texture. Mince the garlic cloves and add them to the avocados.

Combine Ingredients
Add the halved cherry tomatoes, chopped cucumber, sliced red onion, and fresh parsley to the avocado mixture. Drizzle the balsamic vinaigrette over the salad and toss gently to combine.

Add Parmesan Cheese
Shave or grate the parmesan cheese and sprinkle it over the top of the salad. Lightly mix again to incorporate the cheese.

Prepare Pita Bread
Preheat the oven to 180°C (350°F). Cut the pita bread into triangles and place them on a baking sheet.

In a small bowl, mix the za'atar spice with olive oil to create a paste. Brush this mixture generously over the pita triangles.

Bake the seasoned pita in the preheated oven for about 10-12 minutes or until they are crispy and golden brown.
