Prepare the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Stir in the zucchini, bell pepper, and mushrooms, cooking until soft. Add the fresh spinach, Italian seasoning, salt, and black pepper, cooking until the spinach wilts. Remove from heat.

Cook the Lasagna Noodles
In a large pot, bring salted water to a boil and cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.

Assemble the Lasagna
Preheat your oven to 375°F (190°C). In a large baking dish, spread a layer of marinara sauce on the bottom. Place a layer of noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed vegetables, a third of the mozzarella cheese, and a sprinkle of Parmesan cheese. Repeat the layers, finishing with a layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden. Let it cool for a few minutes before slicing.
