Method

Preparation Steps

  1. 1

    Prepare the Cashew Cream

Soak the raw cashews in water for at least 4 hours or overnight. Drain and rinse cashews. In a blender, combine soaked cashews, nutritional yeast, smoked paprika, garlic powder, lemon juice, salt, and water. Blend until smooth and creamy. Set aside.

  2. 2

    Cook the Pasta

In a large pot, bring salted water to a boil. Add cavatappi pasta and cook according to package instructions until al dente. Drain and return to the pot.

  3. 3

    Combine Pasta and Cashew Cream

Add the smoked cashew cream to the cooked pasta and stir until well combined. If the mixture is too thick, add a little more water to reach desired consistency.

  4. 4

    Prepare Chile Breadcrumbs

In a small bowl, mix together bread crumbs, chili powder, and olive oil. Stir until the breadcrumbs are evenly coated.

  5. 5

    Assemble and Bake

Preheat your oven to 375°F (190°C). Transfer the pasta mixture to a baking dish, and sprinkle the chile breadcrumbs evenly on top. Bake for 20-25 minutes until the breadcrumbs are golden brown.

  6. 6

    Serve

Remove from the oven and let it cool for a few minutes. Serve warm and enjoy your smoked cashew mac!
