    Cook the Grits

    In a medium saucepan, bring water to a boil. Stir in the Jimmy Red grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until the grits are creamy and tender. Season with salt and set aside.

    Prepare the Sauce

    In a skillet, heat olive oil over medium heat. Add the Nduja sausage and cook until it begins to render its fat, about 2-3 minutes. Stir in the canned diced tomatoes and cook for another 5-7 minutes, allowing the sauce to thicken. Season with salt and black pepper.

    Cook the Shrimp

    Add the shrimp to the skillet with the sauce and cook until the shrimp are pink and opaque, about 3-5 minutes. Stir in the chopped tarragon before serving.

    Serve

    To serve, spoon the creamy grits onto plates, top with the shrimp and Nduja tomato sauce, and sprinkle with benne seeds.
