Cooking Instructions

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper. Squeeze in the juice of the lemon and mix well.

  2. 2

    Marinate the Chicken

Place the whole chicken in a large resealable bag or a dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

  3. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  4. 4

    Roast the Chicken

Remove the chicken from the marinade and place it on a roasting pan. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

  5. 5

    Prepare Seasonal Vegetables

While the chicken is roasting, prepare your seasonal vegetables (e.g., carrots, zucchini, bell peppers). Toss them in olive oil, salt, and pepper, and roast them in the oven during the last 30 minutes of the chicken's cooking time.

  6. 6

    Serve

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with the roasted seasonal vegetables.
