Prepare the Broth
In a saucepan, heat the vegetable broth over medium heat and keep it warm.

Cook the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté until they are tender and golden brown, about 5-7 minutes. Remove from the skillet and set aside.

Sauté Aromatics
In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

Toast the Rice
Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.

Add Broth Gradually
Start adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the broth before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Finish the Risotto
Once the rice is cooked, stir in the sautéed mushrooms, remaining tablespoon of butter, and grated Parmesan cheese. Season with salt and black pepper to taste.

Serve
Garnish with chopped fresh parsley and serve immediately.
