Directions

  1. 1

    Prepare the Swordfish

Season the swordfish steaks with salt and black pepper on both sides. Drizzle with olive oil and set aside to marinate while preparing the beurre noisette.

  2. 2

    Make Beurre Noisette

In a saucepan, melt the butter over medium heat. Continue to cook, swirling occasionally, until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and stir in the brown miso paste until well combined.

  3. 3

    Toast the Almonds

In a dry skillet over medium heat, toast the sliced almonds until golden brown, about 3-5 minutes. Stir frequently to prevent burning. Remove from heat and set aside.

  4. 4

    Grill the Swordfish

Preheat the grill to medium-high heat. Place the swordfish steaks on the grill and cook for about 4-5 minutes on each side or until the fish is cooked through and has grill marks. The internal temperature should reach 145°F (63°C).

  5. 5

    Finish the Sauce

Once the swordfish is done, drizzle the beurre noisette with miso over each steak. Add sherry vinegar to the remaining beurre noisette, whisking to combine, and pour over the swordfish.

  6. 6

    Serve

Garnish the grilled swordfish with toasted almonds and serve with lemon wedges on the side.
