In a large bowl, combine chicken pieces and buttermilk. Ensure all pieces are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Preparing the Dredging Mixture
In a separate bowl, mix together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Coating the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Place coated chicken on a wire rack and let rest for 15 minutes.

Frying the Chicken
In a large, heavy-bottomed skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry chicken pieces in batches for about 10-15 minutes, turning occasionally, until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
