Crispy Rice Balls Directions

    Cook the Rice

    In a pot, combine Carolina Gold rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes or until the rice is tender and water is absorbed. Let it cool.

    Prepare the Filling

    Finely chop the Benton’s Country Ham and mix it with the cooled rice. Add grated Parmesan cheese and the egg. Season with salt and black pepper. Mix until well combined.

    Form the Balls

    Take a small portion of the rice mixture and form it into a ball (about the size of a golf ball). Repeat until all the mixture is used.

    Coat the Balls

    Dredge each rice ball in flour, dip in beaten egg, and then roll in breadcrumbs until fully coated.

    Fry the Balls

    In a deep skillet or pot, heat oil over medium heat. Once hot, carefully add the rice balls in batches. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

    Serve

    Serve the crispy rice balls hot with romesco sauce on the side for dipping.
