Crust Preparation

    Make the Crust

    Preheat the oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Allow to cool.

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just blended. Do not overmix.

    Bake the Cheesecake

    Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and allow to cool to room temperature before refrigerating for at least 4 hours, preferably overnight.

Berry Compote Preparation

    Make the Berry Compote

    In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook for 10-15 minutes until the berries release their juices and the mixture thickens slightly. Remove from heat and let cool.

Serving

    Serve the Cheesecake

    Once the cheesecake has set, remove it from the springform pan. Slice and serve each piece topped with the berry compote.
