    Marinate the Chicken

    In a bowl, mix olive oil, minced garlic, Lusty Monk mustard, salt, black pepper, and thyme. Rub this mixture all over the chicken, ensuring it's well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking

    Cook the Chicken

    Preheat your grill or stovetop pan over medium-high heat. Place a heavy cast-iron skillet on top of the chicken while it cooks to weigh it down. Cook for about 45 minutes, turning halfway through, until the chicken is cooked through and the skin is crispy.

    Sauté the Rainbow Chard

    In a separate pan, heat a little olive oil over medium heat. Add the chopped rainbow chard and sauté until wilted and tender, about 5-7 minutes.

Serving

    Plate the Dish

    Once the chicken is done, let it rest for 10 minutes before carving. Serve the chicken over a bed of sautéed rainbow chard and drizzle with Lusty Monk jus.
