    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Seasoning

    Once the onions are caramelized, add the minced garlic, thyme, bay leaves, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.

    Combine with Broth

    Pour in the beef broth and bring the mixture to a simmer. Let it cook for 15-20 minutes to allow the flavors to meld. Remove bay leaves.

    Stir in the shredded brisket and heat through, about 5 minutes.

    Preheat your oven to 400°F (200°C). Ladle the soup into oven-safe crocks, leaving some space for the toppings.

    Top each crock with jumbo croutons and a generous amount of Swiss and provolone cheese.
