Cook the Grits
In a medium saucepan, bring the chicken broth to a boil. Stir in the Marsh Hen Mills grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally until the grits are thick and creamy. Stir in 2 tablespoons of butter and season with salt and pepper to taste.

Prepare the Shrimp and Sausage
In a large skillet over medium heat, melt the remaining 2 tablespoons of butter. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Add the diced Creole tomatoes and cook for another 5 minutes.

Add the Shrimp
Stir in the shrimp and Creole seasoning. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Adjust seasoning with salt and pepper as needed.

Serve
To serve, spoon the creamy grits into bowls and top with the shrimp and sausage mixture. Garnish with chopped green onions.
