Gumbo

Buttermilk Cornbread

Method

Gumbo

    Prepare the Chicken and Sausage

    In a large pot, heat vegetable oil over medium-high heat. Add the chicken thighs and sausage. Cook until browned, about 5-7 minutes. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.

    Combine Ingredients

    Add the diced tomatoes, chicken broth, okra, bay leaves, Cajun seasoning, salt, and pepper to the pot. Stir well.

    Simmer

    Return the chicken and sausage to the pot. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes, stirring occasionally.

    Serve

    Remove bay leaves before serving. Garnish with chopped green onions.

Collards

    Sauté Onions and Garlic

    In a large skillet, heat olive oil over medium heat. Add diced onion and garlic. Sauté until onions are translucent.

    Cook the Collards

    Add chopped collard greens and chicken broth to skillet. Cook until greens are tender, about 15-20 minutes. Season with salt and pepper to taste.

Buttermilk Cornbread

    Mix Dry Ingredients

    In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together buttermilk, eggs, and melted butter.

    Combine and Bake

    Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.
