Fried Cheshire Pork Chops

    Prepare the Pork Chops

    Season the pork chops with salt, black pepper, and garlic powder. Dip each chop in buttermilk, then dredge in flour, shaking off excess.

    Fry the Pork Chops

    In a large skillet, heat vegetable oil over medium-high heat. Fry the pork chops until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

    Sauté the Vegetables

    In a large saucepan, heat olive oil over medium heat. Add onion and green bell pepper, sauté until soft. Add garlic and cook for another minute.

    Stir in rice, diced tomatoes, chicken broth, paprika, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.

Collards

    In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft. Add collard greens and chicken broth. Simmer until the collards are tender, about 30 minutes. Season with salt and pepper.

Thunder Sauce

    In a small bowl, whisk together hot sauce, honey, minced garlic, and lime juice until well combined.
