Prepare the Shrimp
In a large bowl, combine the cornmeal, flour, cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk. Dip each shrimp into the buttermilk mixture, then dredge in the cornmeal mixture to coat.

Fry the Shrimp
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated shrimp in batches. Fry for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Prepare the Po Boy
Slice the Leidenheimer French bread lengthwise. Layer with Bibb lettuce, slices of tomato, and generously add the fried shrimp. Drizzle with Duke's mayonnaise to taste.
