Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels.

Marinate
In a bowl, soak the fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Coating
In a shallow dish, combine cornmeal, flour, salt, black pepper, cayenne pepper, and garlic powder.

Coat the Fish
Remove each fillet from the buttermilk, allowing excess to drip off, and dredge in the cornmeal mixture until well coated.

Heat the Oil
In a large skillet or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Carefully add the coated catfish fillets to the hot oil, cooking for about 4-5 minutes on each side or until golden brown and crispy.

Drain
Remove the fried catfish from the oil and place on paper towels to drain excess oil.
