Marinate the Shrimp
In a bowl, combine the shrimp and buttermilk. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, cajun seasoning, salt, and black pepper.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat the Shrimp
Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge the shrimp in the flour mixture until well coated.

Fry the Shrimp
Carefully place the coated shrimp in the hot oil, frying in batches if necessary. Cook for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve
Serve the fried shrimp with your choice of two sides and red rémoulade.
