Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Pat the pork belly dry with paper towels and season it generously with salt and black pepper.

Sear the Pork Belly
In a large oven-safe pot, heat the olive oil over medium-high heat. Once hot, add the pork belly, skin side down, and sear until golden brown, about 4-5 minutes. Flip and sear the other side for an additional 3-4 minutes.

Add Aromatics
Remove the pork belly and set aside. In the same pot, add the chopped onion and garlic, cooking until softened, about 3 minutes.

Braise the Pork Belly
Return the pork belly to the pot, add the chicken broth, and bring to a gentle simmer. Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the pork is fork-tender.

Prepare Butterbeans
While the pork belly is braising, prepare the butterbeans according to the package instructions or heat the canned butterbeans in a pot until warmed through.

Serve
Once the pork is tender, remove it from the oven and let it rest for 10 minutes before slicing. Serve with smashed potatoes, butterbeans, and a generous topping of sweet pepper relish.
