Preparation Steps
Marinate the Goat Cheese
In a small bowl, whisk together the rum, honey, thyme, and black pepper. Place the goat cheese in a shallow dish and pour the marinade over it, ensuring it's well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight if time allows.
Prepare the Baguette
While the cheese is marinating, preheat your oven to 375°F (190°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Drizzle the slices with olive oil and season with a pinch of salt.
Bake the Baguette
Place the baking sheet in the preheated oven. Bake for about 10-12 minutes, or until the bread is golden and crisp. Remove from the oven and let cool slightly.
Serve the Dish
Once the goat cheese has marinated, remove it from the refrigerator. Serve the marinated goat cheese on a platter alongside the toasted baguette slices. Drizzle any remaining marinade over the top and garnish with additional fresh thyme if desired.
