Prepare the Shrimp
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of sea salt and the juice of 1 whole lemon to the boiling water.
Cook the Shrimp
Once the water is boiling, add the wild Mexican shrimp. Cook for approximately 2-3 minutes or until the shrimp turn pink and opaque. Be careful not to overcook.
Ice Bath
Immediately remove the shrimp from the heat and transfer them to an ice bath (a bowl filled with ice and water) to stop the cooking process. Let them cool for about 5 minutes.
Drain and Dry
Once cool, drain the shrimp and pat them dry with a paper towel.
Prepare the Serving Plates
On a serving platter, arrange the shrimp in a neat circle or pile. Add small bowls of cocktail sauce and remoulade sauce in the center.
Garnish
Garnish the shrimp with fresh dill sprigs for a pop of color and flavor.
