Prepare the Chicken Wings
In a large bowl, combine the chicken wings with olive oil, cayenne pepper, garlic powder, smoked paprika, salt, and black pepper. Toss until the wings are well coated.
Marinate
Cover the bowl with plastic wrap and let the wings marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
Preheat the Oven
Preheat your oven to 425°F (220°C).
Bake the Wings
Line a baking sheet with parchment paper and arrange the marinated wings in a single layer. Bake in the preheated oven for 25-30 minutes, turning halfway through until they are crispy and cooked through.
Prepare the Spicy Cucumber
While the wings are baking, slice the cucumber into thin rounds and sprinkle with a little salt and pepper. Set aside.
Make the Pesto Dressing
In a food processor, combine fresh basil, parmesan cheese, pine nuts, and lemon juice. Blend until smooth, adding a drizzle of olive oil if needed to reach the desired consistency.
Serve
Once the wings are cooked, serve them hot with the spicy cucumber on the side and drizzle the pesto dressing over the wings or serve it on the side for dipping.
