In a small bowl, combine the ground coffee, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Short Ribs Preparation
Prepare the Ribs
Pat the beef short ribs dry with paper towels. This helps the rub adhere better and promotes browning.
Apply Coffee Rub
Generously coat each short rib with the coffee rub mixture, ensuring all sides are well covered. Let them sit at room temperature for at least 30 minutes to allow the flavors to penetrate the meat.
Sear the Ribs
In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the short ribs in batches, searing them on all sides until browned (about 4-5 minutes per side). Remove the ribs and set aside.
Add Broth and Thyme
After deglazing, add the beef broth and fresh thyme to the pan. Stir to combine.
Braise the Ribs
Return the seared short ribs to the pan, ensuring they are submerged in the liquid. Bring to a simmer and then cover with a lid. Reduce the heat to low and let them braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
