Cook the Bacon

In a large skillet over medium heat, add the applewood smoked bacon slices. Cook until crispy, about 5-7 minutes, turning occasionally to ensure even cooking.

Collect the Bacon Fat

Once the bacon is cooked, remove it from the skillet and place it on a paper towel-lined plate to drain excess grease. Allow the bacon to cool slightly, then chop it into small pieces. Carefully pour off the excess bacon fat from the skillet into a heatproof container, leaving about 3 tablespoons in the skillet.

Pop the Corn

In the same skillet with the bacon fat, add the giant Amish popcorn kernels. Cover the skillet with a lid, leaving a small crack for steam to escape. Cook over medium heat, shaking the skillet occasionally, until the popping slows down, about 3-5 minutes.

Season the Popcorn

Once the popping has stopped, remove the skillet from heat. Transfer the popcorn to a large bowl. Drizzle the remaining bacon fat over the popcorn and toss to coat evenly. Season with salt and ground black pepper to taste.

Add Bacon

Finally, sprinkle the chopped bacon pieces over the seasoned popcorn and toss gently to combine. Serve immediately while warm.
