Preparation and Cooking

Marinate the Chicken Wings
In a large bowl, combine the chicken wings, olive oil, minced garlic, salt, and black pepper. Mix well and let marinate for at least 30 minutes.

Prepare the Parmesan Garlic Version
Preheat your wood-fired oven to around 500°F (260°C). Once marinated, place the wings on the grill grate and cook for about 25-30 minutes, turning occasionally until they are crispy and cooked through. During the last few minutes of cooking, sprinkle the wings with grated parmesan cheese.

Prepare the Thai Soy Chili Version
In a small saucepan, combine soy sauce, honey, and chili flakes. Heat over medium heat until warmed through. Drizzle this sauce over the cooked wings and toss to coat well. Top with chopped peanuts and a squeeze of fresh lime juice.

Serve the wings hot, garnished with additional parmesan or peanuts and lime wedges on the side.
