Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove from the oven and let it cool.

Make the filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, mixing until well combined. Then, add sour cream, vanilla extract, and mix until smooth.

Add the eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing to prevent incorporating too much air.

Combine and bake
Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggles.

Cool and chill
Turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for about 1 hour. Once cooled, refrigerate for at least 4 hours or overnight before serving.
