    Caramelize the Onions

    Heat olive oil in a pan over medium heat. Add sliced onions and cook slowly, stirring occasionally, until they are golden and caramelized, about 15-20 minutes. Season with salt and pepper to taste.

    Prepare the Meat Mixture

    In a bowl, combine the Wagyu and Iberico meats. Season with salt and black pepper. Mix gently to combine without overworking the meat.

    Form the Patties

    Divide the meat mixture into two equal portions and form them into loose patties. Make a small indentation in the center of each patty to help them cook evenly.

    Cook the Patties

    Heat a skillet or griddle over medium-high heat. Once hot, add the patties and cook for about 3-4 minutes on one side. Flip the patties and smash them down with a spatula to create a crust. Cook for another 2-3 minutes.

    After the second flip, place a slice of American cheese on each patty and cover the skillet for about 1 minute, until the cheese is melted.

    In a small bowl, mix the banana peppers with Dijon mustard to create a tangy spread.

    Toast the burger buns lightly. Spread the banana pepper Dijon on the bottom bun, then add the cheese-topped burger patty, followed by caramelized onions and a drizzle of meat hot sauce. Top with the other half of the bun.
