    Prepare the Marinade

    In a bowl, mix together soy sauce, honey, chili paste, and sesame oil. Add the Ahi tuna steaks and marinate for at least 30 minutes.

    Make the Salsa

    In a bowl, combine diced cucumber and mango. Season with a pinch of salt and toss gently. Set aside.

    Pickle the Carrots

    Julienne the carrots and soak them in a mixture of vinegar, sugar, and a pinch of salt for about 15 minutes.

    Cook the Coconut Rice

    Rinse the rice under cold water. In a saucepan, combine rice with coconut milk and water (1:1 ratio) and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until cooked.

    Sear the Tuna

    Heat a non-stick skillet over medium-high heat. Remove the tuna from the marinade and sear for 1-2 minutes on each side for medium-rare. Sprinkle sesame seeds on both sides while cooking.

    Plate the Dish

    On a plate, serve a portion of coconut rice, topped with the seared Ahi tuna. Add cucumber mango salsa, pickled carrots, and a small side salad.
